Waste-free cooking like a chef

In a practical video, Tichelaar shows you how to use the broccoli stem for delicious dishes, from puree to fried slices. Many people throw away the stem, but it's actually very tasty and versatile. At De Gieser Wildeman, we don't throw away any food. We have a good overview of our inventory. This way, we know exactly what's available and what we need. Any leftovers are used the next day in new dishes or as part of our daily menus. This way, we ensure that nothing goes to waste.
